Red Lentil & Sun-dried Tomato Rice

I truly enjoy rice, always did, always have. It was a must for me at every meal.

There are many who don't and won't agree with me when I say this and clearly ....I don't blame you. We all have different perspective on food and what fits us best.

There many sides to this wheat. Some that we all debate on to this day. I have done some fair research on this subject of rice and to be completely honest ... to each their own.

Most people would call this bad carb, others would call it a staple to each meal. But one things for sure I enjoyed this meal.

And you will too!

Growing up in the Philippines, Eating rice was a norm, and still is.

We ate it a lot if not daily, more than what we should have. It was the main course. Yes I said it white rice as the main course. Everything else ...is side dish. But that just how it is in the Philippines and most Asian countries---and not to be biased to say the least -but also in most places around the world

About 85%+ of the world population consume wheat, rice, bread and pasta of all sorts. It is what we grew up knowing. And eating.

Some of us favor one over the other depending on the culture you grew up on. I have recently made the decision to slowly cut down my rice intake and so far the progress have been sustainable for me. I find that eating rice all my growing life is enough for my body. I feel that its time to eat differently, and to eat completely clean.

But every once in a while I have rice. And when I do I make sure its enjoyable and worth every bite so I decorate it with all sorts of flavors similar to this one.

I had purchased sun-dried tomatoes recently while I was downtown Toronto and thought I should try it in a few dish at home. I have successfully added it to some of my pasta dish and loved it to the last bite. And I thought hey this would taste extremely amazing with rice. I was initially going to make red lentil rice alone and then I thought how much more wonderful this red addition would be

And a collision was made. A delicious one.

You need only 3 ingredient

Lets get you started

Red Lentil & Sun-dried Tomatoes Rice

Prep Time: 5 min

(Already cooked rice and lentil)

Prep Time: 1 hr and 5 min

(Altogether)

Cook Time: 20 min

Ingredients:

2-3 cups of Cooked Rice (according to package instruction)

1/2 cups of Cooked Red Lentil (according to package instruction)

1 to 1.5 cups of Sun-dried Tomatoes

Seasonings:

2-3 tbsp of Oil

Finely Chopped Onions

Finely Chopped Garlic

1/2 tsp of Paprika

1/2 tsp of Sea Salt

Sprinkle Black Pepper

1 tbsp of Tomato Paste

1 Vegetable cube broth

Directions:

  1. Cook rice according to package instruction or use leftover white/brown (I used jasmine) rice of your choice.

  2. Boil lentil according to package instruction. If using can lentil, drain and rinse, set aside.

  3. Finely chopped onions and garlic set aside.

  4. In a deep, medium-large size pot, heat up 2-3 tbsp of olive oil or preferred oil of choice to medium-high

  5. Once heated, add onion and garlic to the pot and let simmer for 1 min.

  6. Lower heat to medium.

  7. Add in cooked red lentil to the pot. Season with sea salt, black pepper, paprika, 1 cube of vegetable broth (ensure its vegan). Stir occasionally and let simmer for 5-7 minute, while the seasoning soak in.

  8. Finally add in cooked rice to the pot. Stir and mix in ingredients all together till blended evenly. Lower heat to medium-low.

  9. Throw in 1 -1.5 cup of dry sundried tomatoes. Stir and mix well until evenly. Lower the heat to Low setting and let cook for another 5-10 min, ensuring that the rice does not stick to the bottom-->stir occasionally.

  10. Serve, Eat and Enjoy!
