Spring Mix Bean Medley Salad

Because we just cant stop thinking about spring in the middle of winter.
I know I feel it too..
For the most part its spring's rhythm that I miss so dearly and with that rhythm comes food. A lot of food!
Colorful food, the greens and the reds, the salads at its very best!!
That roasted BBQ scent of sweet corn and bell peppers.
Yes only a vegan would understand.
Not just grilled vegetables, but that extra meaty and textured vegan burgers of all sorts.
With these in mind during this winter haul, I cant seem to help but miss whats coming!

So while were here, in the middle of winter, why not brighten the kitchen up with a salad so colorful a rainbow couldn't compare, and one so rich in protein, cows wouldn't dare.
This colorful bean medley salad is the truth.
Its sweet and tangy- A combination worth tasting.
Super simple and quick to make, Your children can whip it up (with the help of using a can opener of course, but you get the point :)
No need for heating, cooking or stoves, a perfect 3 ingredient cooling salad for any occasion is all you need!

Spring Mix Bean Medley Salad

Kitchen Utensil:
1 large glass or salad bowl
Mixing spatula
Can opener
Ingredients:
1/2- 1 whole Cucumber or 1/2 a cup of cucumber
1-2 whole Ataulfo Mango
Seasonings:
1/2 Lemon/Lime Zest
Sea salt (Pink Himalayan)
Directions:
1. Rinse and drain mixed bean medley from can. Set aside in a large mixing bowl.
2. Peel and dice yellow Ataulfo mango into cubes.
Here's a tip for cutting mangoes: Slice mango vertically into three which gives you two sides and the seed which is in the middle. The seed in the middle contain little mango flesh in its outer corners, so your best bet is to eat it minus the seed of course. The last two sides of the mango are perfect for cubing. Start by slicing horizontal and vertical lines along the fleshy part of the mango making square like shapes. Flip over the mango as if your flipping it inside out. This would cause the cubes to pop out like an origami piece. Beautiful ain't it! Remove each cube onto the bowl using a spoon.
3. Peel and dice cucumber into cubes. Then throw into the same mixing bowl.
4. Squeeze half a lemon (or a full one if you'd like) into the mixing bowl and sprinkle some sea salt.
5. Mix everything together.
6. Set in the refrigerator to chill for less than half and hour.
7. Once ready..
8. Serve,
