Creamy Avocado Slaw

Avocado-slaw a genius combination of vegan and rich creamy goodness. Its thick texture and

delicious flavor make this dish too good to be for sides. Summer BBQ's and late afternoon cravings of a cold and creamy delicious slaw.

Before transition to plant-based eating , I gave up the idea of ever having to enjoy the creamy taste of mayo coleslaw. After weeks of searching for the perfect alternate for mayo, the right one came along, Avocado. I can go on and on about how great avocado is, I mean really, on and on, its nutritious and are loaded with healthy fats. Avocado has a great thickening effect that makes this the perfect replacement for mayonnaise. Think about it this way, just compare the two, avocado vs mayo, do the math, do the research and eat what is right, vegan or not.

It is a lighter and greener twist of the classic coleslaw. Forget the mayo, avocado is the new healthy trend its versatility and creamy texture make this the perfect and tastier substitute. Its raw, its vegan, and an absolute garnish to your meal. A powerhouse fusion of healthy fats,

low calories and fiber.

It needs not much time to make, 10 minutes to be exact. The main ingredients is none the least, avocado, green cabbage and carrots. I began by shredding one cup of cabbage and another cup of carrots. You can also purchase premixed coleslaw in your grocery store for more convenience. In a small bowl, with fork, mash one half of a regular-medium sized avocado or if you have organic or smaller size use a full one to achieve more thickness. Squeeze one half of a lemon, and add one tablespoon of agave or maple syrup onto the bowl. Sprinkle some sea salt. In a large bowl throw in your shredded carrots and cabbage, and the avocado sauce. Toss until evenly mix. Set in the fridge to cool. Fun and easy to make!

AVOCADO Slaw

Note: A fresh ripe whole avocado is key to its richness.

Servings: 2

Total time: 10 min

Ingredients:

1 cup of shredded cabbage

1 cup of shredded carrots

1 fully ripe avocado

Seasonings:

1/2 lemon, juiced

1 tbsp of agave syrup

1/2 tsp of sea salt

Directions:

1. Place shredded cabbage and carrots in a large bowl

2. In a smaller bowl, mash avocado with a fork

3. Stir in seasonings (1/2 lemon, juiced 1 tbsp of agave syrup, 1/2 tsp of sea salt )

4. Toss dressing in large bowl

5. Mix the dressing along with the cabbage and carrots

6. Set in fridge until serving
