Creamy Macaroni Grilled Cheese

This scrumptious treat is fairly easy to make, it took less than 20 minutes to whip up and no little than 5 minutes for us to devour. Best of all, its dairy-free so worry yourself free of any grumpy tummies afterwards, although beware, its very delicious. It is the ultimate comfort food vegetarian or not. We all enjoyed growing up to a late brunch made of creamy, cheesy grilled cheese sandwich our mothers use to whip up. Think of this as the buffed up, clean, mean version of the old classic grilled cheese. The perfect Saturday brunch for you and the kids.. and their friends, maybe.

All you really need in your shopping list are Daiya dairy-free cheese, bread and macaroni. If you're unfamiliar with Daiya products and would like access, click on the link. First we cooked up mac and cheese vegan style using dairy free cheese, milk and butter. This process took no more than 15 min to make. Once ready, slice a few loafs of whole wheat grain bread. Lightly grease pan with earth balance butter or as I like it with 1 tsp of coconut or olive oil. Slap on a scoop of mac n cheese on one side of the bread. Form a sandwich and drop on a hot greased skillet until golden brown. Its creamy, delicious and easy to whip up. So C'mon and get cooking.
Creamy Macaroni Grilled Cheese
Ingredients:
Mac n' Cheese
1/2 cup of Macaroni White (gluten free)
1/2 cup of Daiya Cheddar cheese
1/2 tsp of Earth Balance Butter (vegan)
14 cup of unsweetened almond milk (or preference of plant-based milk)
Grilled Cheese
6 loafs of Bread (ancient wheat with Quinoa)
1 tsp Olive oil or coconut oil (grease pan)
or 1 tsp of Earth Balance Butter
Directions:
1. Boil Macaroni Pasta til tender (or desired texture)
Rinse and Drain
Mix cheese, butter, and milk
Stir, until sauce is smooth
2. Heat pan for grill cheese
Spread mac n' cheese onto one side of bread
Form a sandwich
3. Lightly Grease Pan
Heat pan over medium
Place sandwich on heated pan
Grill for 2 min each until golden brown
4. Serve
