Ginger and Garlic Adzuki Bean Rice Medley

The small and traditional red beans of the east. Originating from China, Adzuki or Azuki beans are often enjoyed along with rice and are commonly used as an ingredient to sweets and desserts. Adzuki Beans are high in nutrition with many benefits including weight loss.

Yes you can shed some pounds by eating this bean! How you may ask. Adzuki beans contain 13 grams of fiber which in turn helps you feel satisfied faster, eating less food. 20 grams of protein (vegans love plant-protein), and 0.5 gram of fat per 1 cup. Now that's a good bean!

It can also kick that sugar craving to the curb. Because of its high fiber content it can decrease our habitual cravings to refined sugary sweets. In japan adzuki beans are traditionally used in sweets such ice creams, popsicles, pastries and many other sweet desserts. These beans are low in calories, fat, high in fiber and is fairly easy to digest. Adzuki beans have proven to increase metabolism, as well as balance blood sugar level.

Many benefits and many recipes to make. Adzuki bean is a favorite of mine simply because it is versatile.

Beans are a vegan's greatest ally, they bring to life the myth about proteins and vegans.

Call it fast food if you may, this dish is fairly easy and quick to cook up. The best kind of rice to cook with is left over rice. I used parboiled rice when making medley dishes because of its firm texture, and quick cook time. I shredded 2 small baby carrots to fill a 1/4 cup or for a 2 plate servings. If you also have store-bought shredded ones then you are good to go. For the mix vegetables I used organic frozen mix vegetables because I find that it has more flavor. I use the whole can 425 g of adzuki bean and thinly minced ginger and garlic clove to compliment this dish further.

If you have 15 minutes and some left over rice, mixed veggies laying around in your fridge and beans in your cupboards then the only thing left to do is to get cooking.

I say be creative, a great substitute would be black beans because they have quiet the same taste and texture. Mhmm.. maybe I will try that next! Black bean rice medley, Yum!

Ginger and Garlic Adzuki Bean Rice Medley

Simple and healthy Adzuki rice medley.

Servings: 2

Prep Time: 5 mins

Cook Time: 8 mins

INGREDIENTS:

3 cups of cooked white/brown rice

1 can (425g) of Adzuki bean

1/2 cup of frozen mixed vegetables

1/4 shredded carrots

1 clove of garlic

1 slice of ginger

2 tbsp. olive oil

Notes: Begin by prepping rice to cook if you have no leftovers from the previous day.

Then shred 1/4 cup of carrots or potion required amount for two servings.

Once rice is cooked set aside 3 cups.

Rinse and drain adzuki beans from can.

DIRECTIONS:

1. In a skillet or wok pan, add 2 tbsp of olive (or coconut) oil and let it heat over medium-high.

2. Throw in ginger and garlic onto the pan and let it simmer for 1 min, stirring occasionally.

3. Add in 1/2 cup of mixed vegetables (peas, corn, carrots) and the adzuki beans.

4. Stir veggies and beans occasionally and let it simmer for 3 min. Lower heat to medium.

5. Add in cooked rice to the pan and stir until you have an even mixture.

6. Cover and simmer for 5 mins over low heat.

7. SERVE
